Dandelions are a such a healthy way to spruce up a salad. They provide several great health benefits. If you can't find them in a store... you may just need to look out your window. 🙂

Simple Dandelion Green Salad
 3 cups torn dandelion greens
 1 head of green leaf lettuce
 1 bunch of fresh baby spinach
 1 cup thinly sliced red onion
 3 chopped tomatoes
 2 sliced carrots
 3 sliced hard boiled eggs
Honey-Lime Dressing
 ¼ cup fresh lime juice
 ¼ cup olive oil
 2 tbsp honey
 1 pinch sea salt
 1 dash cayenne pepper

Directions

Toss all ingredients in a bowl.
Divide between 2 plates.

Whisk ingredients together and pour over salads.
