
In a small bowl combine orange juice, apple cider vinegar, olive oil, ginger, honey, parsley, salt & pepper. Mix well and set to the side.
(If you have a small jar with a lid place all the ingredients in the jar put the lid on. Shake it up well.)
After washing the carrots, zucchini & yellow squash, use a vegetable peeler to shave each into wide ribbons.
Place all veggie ribbons into a large bowl and toss with the orange vinaigrette. Enjoy right away or place in refrigerator and eat later. The flavor is even better after sitting overnight in the dressing.
