Maple/Pecan Sweet Potato Casserole

 5 sweet potatoesor 6 cups diced sweet potatoes
 ¼ cup coconut oil
 2 eggs
 1 tsp vanilla extract
 1 tsp cinnamon
 ½ cup maple syrup
 2 tbsp unsweetened almond milk
 ¼ cup coconut oil - softened
 12 dates - pitted
 ½ cup chopped pecans

Preheat oven to 350 degrees F. Lightly grease a 9 inch casserole or pie pan

Put sweet potatoes in a pot and cover with water. Boil until they are tender.

Drain the water from the potatoes and transfer to a large bowl.

Mix the sweet potatoes, 1/4 cup of coconut oil, eggs, vanilla, cinnamon, maple syrup and unsweetened almond milk together. Put mixture into the prepared baking dish.

Toss the dates into a food processor or chop by hand. You want them finely chopped.

In a medium bowl, combine 1/4 cup of softened coconut oil, chopped dates, and chopped pecans. Mix completely.

Sprinkle the topping over the sweet potato mixture.

Bake in the preheated oven for 30 minutes.
